Grain-Free Almond Butter Cookies
Ingredients
1 cup almond butter (crunchy or creamy)
3/4 cup coconut sugar
1 egg, beaten
1 teaspoon vanilla extract
1/4 teaspoon coarse sea salt, plus more for sprinkling
12 whole almonds, for topping
Preparation
Preheat oven to 350° F. Combine almond butter, coconut sugar, egg, vanilla and salt in a mixing bowl. Stir until the dough is a uniform consistency and pulls from the sides of the bowl.
Roll the dough into 12 balls and put them on a parchment-lined baking sheet. Gently press each dough ball down with a fork to form a criss-cross pattern. Top with an almond and sprinkle with coarse sea salt.
Bake for 10 minutes. Remove from the oven and let cool completely on the baking sheet before serving.
